Audrey's Quick Chicken Dinners


De Vere had a very close friend drop by during the week. Dinner was to be something filling and easy. Also Loco, our visitor, is hands on within the 'cooking' industry. No Pressure!

So I went with a golden oldie... Audrey's chicken Burgers..

Enjoy, Loco and De Vere did.

pesto-mayo and chili-mayo...
simply add pesto or chili to mayo. stir and spread. yum.

Loco loves chili. De Vere not so much.
So here is the beginnings of Loco's chili-mayo on a fresh roll.


crumbed and shallow fried chicken thigh fillets.

De Vere did comment that cook may have been a little
heavy handed with the condiment.. mmm... I must agree.

add chicken thigh fillet and cheese slices. Here I have used Swiss.

I like to use the fancy chook napkins anytime and they are extra thick for the burger to be served as is.. saves on housework - allows for garden wondering whilst eating or eating in East Wing.


leftovers to go... Loco was bid a good night and sent home with a burger that used all of the leftovers. Leaving Dolly Dustpan's cleaning to a minium. Oh and some cherry tomatoes from Boyle Manor garden.
